Couscous bowls...or plates

Do you ever groan because rice will take an entire 20 minutes to make? Sometimes when I get home (ok let's be real, all the time) I'm super hungry and want to eat as soon as possible. One interesting aspect to our airbnb is that it takes less time to prepare some meals than it does to grab take-out. It's annoying, but also forces us to cook a bit more.
Enter couscous. It takes 5 minutes to prepare. You boil water, dump the couscous in, and then let it sit. It's magic!!! It's an ok source of plant based protein at 6 grams per cup. It's probably not as bad or as good as some other carbs. It's pretty tasty though, and super easy, and better than takeout or cereal. Win.
We've taken to making couscous bowls, and buying rotisserie chickens from HEB. I've become a master at taking them apart asap when we get home from the store, shoving it in a tupperware for easy access, and using it the next few days. Throw in some cherry tomatoes, avocado, cucumber, feta and olives, and it's delicious! We don't use any sauce because there's plenty of flavor with the feta.
I also discovered you can microwave corn. Who knew?!? It took one minute. I was pretty excited.
I'm also on a watermelon kick, but then, this phase tends to last me at least half the year. I love percussing watermelons because there's such a big and obvious difference between them all; it makes me feel talented. I could never really distinguish sounds percussing on a human abdomen, so this feels somewhat redeeming.
